Vegetable Kicks
I tend to get on these vegetable kicks where I become obsessed with a certain vegetable and I eat a lot of it.
My husband is wonderful for willingly eating the same vegetable multiple times in one week!
I know it is easy to do that while on IP, so I hope this recipe can help you mix it up a little! Right now, I am on a cabbage kick and I must say, I have loved the cabbage recipes I have made, so I am sharing one!
This recipe is super quick and easy so it is perfect for a weeknight veggie idea!
You will need:
● 16 oz shredded cabbage
● 1⁄4 cup of chopped onion
● 2 tsp Olive Oil
● 1⁄4 tsp Apple Cider Vinegar
● 1 tsp Garlic Powder
● 1⁄2 tsp Paprika
● 1 1⁄2 tsp Sea Salt
● 1 tsp Pepper
● 1⁄2 tsp Onion Powder
Add the olive oil to the skillet and then your cabbage. Add in all the spices. Cook until the cabbage is desired texture. The last minute of cooking add in the onions and then remove from heat before the onions caramelize.
If you wanted to add some extra veggies to mix in with the cabbage here are some suggestions:
- bell peppers,
- mushrooms,
- jalapeno peppers for some spice,
- for color add red cabbage,
- or some green onions.
This goes great as a side dish or mix it with any type of meat as a “noodle” replacement!
